Purchasing and Storing the Spices

A rack of spices neatly displayed on a kitchen counter is typical; however, this practice drastically reduces the life of this most vital element in your Ayurvedic meal. Sunlight rapidly degrades the prana in spices, so keep yours in a dark cabinet away from the light.

Also, when you buy spices, you should pay attention to how they are preserved. You don’t want to consume anything that’s sat on a shelf for years. Look for sellers that offer spices in light-blocking containers, particularly if you’re purchasing ground spices since volatile oils degrade quickly. Purchase modest quantities from a reliable provider. When using them at home, don’t be afraid to compost anything that seems or smells old; if it doesn’t smell fresh, it won’t taste fresh and won’t promote digestion.

For grinding spices, use an electric coffee grinder or a mortar and pestle. Both tools have benefits; an electric grinder can crush stubborn seeds into a fine powder, but the mortar and pestle require more of your effort. Try both and see which one you prefer.
